Pancake Layer Cake

Recipes Pancake layer cake

Ingredients

  • 7 De Waflebakkers Buttermilk pancakes
  • Buttercream frosting:
    • 12 ounces of cream cheese, softened
    • 2 sticks of unsalted butter
    • 5 1/2 cups powdered sugar
    • 1/4 teaspoon of vanilla extract
    • 1/2 teaspoon of milk
  • 1/4 cup of strawberry jam
  • 4 strawberries sliced lengthwise

Directions

Microwave 7 De Wafflebakkers pancakes (according to packaging). Set aside.

Using a mixer, beat cream cheese and butter in large bowl until smooth. Add powdered sugar 1 cup at a time, beating well, add vanilla extract and milk. Beat until smooth.

Place 1 cup of buttercream frosting into a small bowl and mix with strawberry jam. Set aside to use as additional filling.

To assemble: 

Place pancake on cake plate or plate. Spread 2 tablespoons of buttercream frosting on pancake.

Add second pancake. Spread 2 tablespoons of strawberry buttercream on pancake.  Add third pancake.

Continue to alternate frosting fillings until last pancake is used and cake layers are complete.

Top with strawberry slices.
