Pulled Pork Sandwiches

Ingredients

  • 1 (2 pound) pork tenderloin
  • 1 (12 fluid oz) can or bottle root beer
  • 1 (18 oz) bottle your favorite barbecue sauce 
  • 8 De Wafelbakkers Buttermilk pancakes

Directions

Place the pork tenderloin in a slow cooker. Pour the root beer over the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 7 hours. (Note: The actual length of time may vary according to individual slow cooker.) Drain well.

Stir in barbecue sauce.

Microwave pancakes (according to packaging).

Place one scoop of pulled pork mixture on a pancake. Top with another pancake. Repeat with remaining pancakes.

Serve immediately with your favorite BBQ side.

Cook's Tip: Start cooking pork ahead of time in the morning so when you arrive home from work it is done and waiting to finish.
