Roast Beef Snackers

Ingredients

  • 24 De Wafelbakkers Mini pancakes
  • 1 pound thin sliced medium rare roast beef from your deli counter
  • 8 slices of provolone cheese cut into quarters
  • Remoulade sauce:
    • 1/4 of a large red pepper cleaned and cut into strips
    • 1/2 stalk of celery chopped
    • 1 green onion chopped (including all the green)
    • 1/4 cup of fresh chopped parsley leaves
    • 3/4 cup of mayonnaise
    • 2 tbs of dijon mustard
    • 2 tbs of ketchup
    • 2 tbs of horseradish
    • A couple shakes of Worcestershire sauce
    • A couple shakes of Tabasco sauce
    • 2 tsp of paprika
    • 1/4 tsp cayenne pepper

Directions

Microwave Mini pancakes (according to packaging).

In a blender, blend together red pepper, celery, onion, parsley, horseradish, vinegar, mustard, mayonnaise, Worcestershire sauce, Tabasco sauce, paprika and cayenne pepper. Set aside. 

Arrange pancakes on plate.

Spread a thin layer of remoulade sauce on each of the Mini pancakes.

Place triangle of provolone cheese on top of sauce.

Place a folded piece of roast beef on top of cheese.

Top with dot of remoulade sauce for garnish and taste.
